Margarita Pie

Make this pie at least four hours before serving, the day before is best.

1 purchased graham cracker pie crust
1/4 cup water
1 packet plain gelatin
1 cup liquid Margarita Mix (I used Jose Cuervo)
3 tablespoons sugar
1/3 cup tequila (I used Jose Cuervo Gold)
1 12 ounce carton whipped dessert topping
3 drops green food color or enought to tint a 
  pale green like a frozen margarita
Grated peel of one lime

Place pie crust in freezer to chill at least 2 hours (a cold crust will make the pie set firm more quickly.)

Place 1/4 cup water in small and heat to boiling in microwave, about 1 1/2 mins. Add the plain gelatin to the water and stir until completely dissolved.

In large bowl, combine margarita mix, sugar, food color and tequila. Add the gelatin and mix well. Place mixture in refrigerator about 20 minutes to chill.

Then add the whipped topping (except about 1 1/2 cup for garnish) to the margarita mixture.

Use whisk or electric mixer to incorporate the margarita mixture into the whipped topping. Beat about 2 minutes until throughly combined and uniform in color..

Pour mixture into pie crust. Place pie in refrigerator to chill at least 2 to 3 hours. Pie will set firm. Before serving, spoon remaining topping in center of pie and garnish with the grated lime peel.

For St. Patrick's Day, increase the green food coloring to make the green color a little stronger.
