Champurrado

(traditional Christmas Drink in South Texas)

1 cup cornmeal or masa harina
1 cup water
1 cinnamon stick
6 cups milk
1 teaspoon Mexican vanilla
1 cup sugar
Pinch salt
3 (1 ounce) squares, unsweetened chocolate

In a heavy sauce pan, mix cornmeal and water until there are no lumps. Add cinnamon stick and bring to boil over low heat, stirring frequently. Remove from heat.

In another saucepan, heat milk, vanilla, sugar, salt and chocolate. Cook and stir until the chocolate melts and the milk is just to the boiling point. Add the cornmeal mixture to the chocolate milk, stirring vigorously. Remove cinnamon stick and serve hot in cups.
