Red Chili Sauce

(this can be used as base for many recipes or as a table sauce)

12 New Mexico Dried Red Peppers
2 cloves garlic
1 onion chopped
2 tablespoons oil

Stem, seed and de-vein the peppers. Cut peper into pieces and place in a glass bowl. Pour boiling water over the peppers just to cover. Let soak for one hour.

Put peppers and the pepper water in food processor along with the onion and garlic. Process about 5 minutes until very smooth and creamy. All the skin particles should be gone.

Heat the oil in a heavy iron skillet. Pour in the chili mixture and cook over medium heat for 10 minutes. Stir constantly to keep from burning. Add water to thin as needed. The sauce should have a consistency of a thin gravy.

Makes 2 cups

You can make the same sauce with ancho peppers.
